Purple Naked Barley is grown at Lille Søbygård on Ærø.
Completely free of any pesticides or artificial fertilizers, only with catch crops. Naked barley has a high content of antioxidants, which are also known from blueberries and red wine.
It also contains a lot of protein, which gives a long and good feeling of satiety. Purple naked barley is the Nordic climate-conscious answer to rice & pasta. It is perfect for both hot dishes and salads, it can also be ground into flour.
Tips for Purple Naked Barley:
Rinse the grains and soak them overnight or cook 1 dl of naked barley in 2 dl of water with a little salt for about 20 minutes over low heat, covered.
Naked barley is good in salads and hot dishes
Use them instead of pasta or rice
They are also perfect in bread or bun dough, where the cooked barley makes for a juicy, fiber- and protein-rich bread.
